Pizzoccheri is a type of short tagliatelle and made with 80% buckwheat flour and 20% wheat flour. When classically prepared in Valtellina it's cooked with seasonal greens and cubed potatoes. It's then layered with pieces of Valtellina cheese and ground Parmigiano and dressed with sauteed garlic, butter and sage. Bellissimo!
