One of the most popular pasta types across Italy .. indeed the world! Penne means “quills” and refers to straight tubes of pasta cut diagonally at the ends like the old a quill pens. Rigate means “ridges” and this increases surface area and subsequent sauce adherence. From the famous Neopolitan Garofalo pasta company.
