This unique Pecorino is manufactured according to an ancient Tuscan tradition.
In the area of Pienza and the Valle d'Orcia, farmers here have atraditionally matured Pecorino cheeses for a long time, in earthenware jars and with walnut leaves. A personal favourite of our unbiased Managing Director whose family just so happen to live in the area.
Maturing: 6 - 12 months
Shelf Life: 6 months
