The large/broad fettuccine. The name derives from the verb pappare, “gobble”. The pasta shape is so popular that in Italy there are towns that have festivals honouring it! Pappardelle make a brilliant combination with any meat sauces but also delicious with tomato and cheese sauce or with creamy sauces that adhere well to the pasta.
