Made with thistle rennet, this ancient hard cheese takes considerable skill to produce. The cheese has a rich, deep flavour with a balanced sweet-savoury bite to finish. The texture is slightly softer than parmesan: smooth, even and moist - perfect for grating into salads. Made by Fattorie Fiandino who are entirely committed to sustainable farming practices and using 100% locally-sourced milk.
