Castelmagno is a semi-hard, half-fat cheese produced from the milk of the Piedmontese cattle in Valle Grana, on the Piedmontese Alps close to France.
Thanks to its intense flavour, it is an ideal topping for gnocchi di patate and risotto and equally a wonderful after-dinner cheese.
Maturing: 12 weeks
Shelf Life: 3 months
Ingredients: Pasteurised cow's milk, rennet, salt.
